Checkout my latest Instagram post. Last night for dinner I made chicken drumsticks with string beans and tomato salsa. All gently cooked in my sauté pan! I got this pan from Woolworths. It’s the best $30 I have ever spent.

A refreshing salad that is quick to make and perfect for those hot summer days.
Crumbed Chicken Hawian Salad Bowl
5 min prep
1 min cooking
1 serving total
596g weight
192 cals/serving
– 8 ingredients –
1/2 cup chopped raws Vegetables tomatoes grape by Freshdirect
1 medium Vegetables cucumbers mini seedless by Freshdirect
1/2 servings Red leaf mixed salad by Woolworths
1/2 cups, chopped Carrots raw
1/2 cups, diced Pineapple raw
30g Crumbed chicken breast steaks by County Fair
1 tbsp chopped Chives fresh or raw herb
1 tbsp Vinegar balsamic
– steps –
1) wash and cut up vegetables. Arrange in medium size bowl.
2) heat pre-made crumbed chicken and diced pineapple in microwave for 30 seconds (1000 watts).
3) Take out of microwave and slice chicken. Arrange in bowl with rest of vegetables. Add salt and chives and drizzle vinegar on vegetables. Serve!

Leftovers make great salads! Last night I made grilled chicken and some potato salad. The left overs I used in a salad bowl with mixed lettuce leaves, cucumber and tomatoes. Very filling and ok apart from the potato salad it’s very nutritious.

Sometimes it’s so hard to workout what ti have for dinner. Working long days or studying sometimes we are too tired to even think about cooking. Take away food become our go to choice.
This not only impacts your wallet but has a tremendous impact on your health! I am a big fan of one pot or one pan dinner. They are quick and easy and cleaning up is a breeze afterwards!

Feeding the kids on school holidays can be horrendous. Who doesn’t like this and who doesn’t like that. Cocco Pops were so last week.
I like to keep staples like premade pancakes, piklets and waffles. Although they are not the healthiest choice they are a crowd favourite. Pair it with their favourite fruits and you should have a winner every time!
Woolworths have a great range of pre-made breakfast items to suit every taste.

A quick and healthy lunch idea, that is gluten and lactose free.
15 min prep
5 min cooking

– 5 ingredients –
1 tortilla Gluten free tortillas by Mission
50g Mild & tender baby leaf spinach by Woolworths
1/2 avocadoes, hass Hass avocado
1/4 cups Organics cherry tomatoes by Melissa’s
1 serving Lactose free colby cheese slices by Liddells
– steps –
1) Place one tortilla wrap on a microwave safe plate. Microwave for 30 seconds to soften it.
2) Top with baby spinach, sliced avocado, sliced tomatoes. Add salt. Top with cheese.
3) Carefully fold in half and place in a sandwich press for a couple of minutes to crisp the tortilla and melt the cheese.

After a couple of weeks of really over doing it. Indulging in all sorts of cakes, pastries, chocolates, Italian food, more Italian food. My stomach is seriously protesting!
Time to put the indulgence aside for the next holiday season! That’s if you can ignore the chocolate chip hot cross buns retailers have decided to bestow on us and get back to clean and healthy eating. Above is quick lunch or snack idea. Using Orgran corn crisp bread and my favourite Liddells Lactose free cheese.
